Redneck Breakfast in my house growing up in NC: Country ham (salt cured), homemade biscuits, eggs fried in bacon grease (a tub full kept by the stove), red eye gravy and grits.

Good country ham is hard to find outside of NC.

Hardees offers a mediocre country ham biscuit. It's the thinnest cut country ham I've ever seen, ever!
