Coffee roasters: re-thinking post-roast rest times
I usually roast between 1/2 and 1/3 cup of beans in a batch - that seems to give me the best results in either the Rosto or the Poppery I use to do my roasting. That works out to one largish drip pot (work day) or one 32oz press pot with a little left over (weekend day). During the days immediately following my wife's surgery, I was getting up early and going to the hospital every day. I had no time for my usual amounts of coffee, but I needed some, so I'd brew a 12-oz travel mug to take along for the 30-minute drive to the hospital.
That typically used about a third of a batch of beans, which meant I was resting beans from individual roast batches 12, 36, and 60 hours, more or less. Now, I have tried varying rest times before, but not with individual roasts, and the results surprised me: flavors smoothed out, brightness diminished (which for me is a positive), and overall the quality of the cup seemed to improve. I contrast that with this morning's cup. I'd forgotten to roast any the night before, so I roasted a batch of Indian Pearl Mountain MNEB from SM's, and ground and brewed them warm from the roaster. I love this coffee, but brewing beans warm from the roaster goes into the "not a good idea" column for me. So, I'm thinking about trying to plan far enough ahead to rest all of my coffee for a couple of days. I'd be interested in hearing from the other coffeeheads here - have you tried varying rest times from individual roasts before? If so, were your experiences like mine? Now, to pick tomorrow's brew....and Tuesday's too!
