carbon steel pan
I have spent the evening smoking oil in a new pan, looking forward to a somewhat slicker surface than the old reliable lodge...

My wok is carbon steel and over the last 30 years it's mellowed. My skillets are either stainless or cast iron. Let us know how that works.

I am on the 7th cycle of smoking the oil and wiping it out... starting to get a patina. Upside it is a lighter pan and it has sloped sides. And the pan is skating rink smooth... I will update on the pan next week (Leave for WPB and the great smoke Thursday)

My exhaust fan couldn't handle it. I'd have to take the smoke detector outside or go insane listening to it.

I have found that running the furnace with fan mode set to 'on' helps a lot.

ok... used the pan last night for pork chops.
Per the advice given on Milk Street Kitchen, I seasoned the pan once before I used it, using sunflower oil (high smoke point). Much like using cast iron, but I can see how you could cook eggs in this... buck smoother surface. Chops released easily. Hot spots on pan a little more noticeable than with cast iron, but pan is a little lighter overall so that is not a surprise. A jolt of cold water in the hot pan released everything so it wiped out cleanly. some of the seasoned surface did come off but was very minor, and not unexpected. I did re-season the pan after consuming the chops. Based on one use, very much like it.

after a second use I would call this pretty close to non stick, seasoning before each use is a little bit of pain, but it does give you one slick surface, For the price, this is an excellent pan, but it does require some care that many would not enjoy doing.

OK... I love this pan... sautéed veggies tonight (onion garlic cabbage) and no sticking at all and just a lovely browning nice and slow...
