Another Ribeye method

This method takes about an hour'ish...

Start with thick cut of ribeye ... i usually use 2"

salt and pepper both sides generously , rest on counter 30 minutes to let it get to room temperature...

in mean time set oven to 275...

you will need a remote thermometer for this method...

after ribeye is at room temp , insert thermometer , put in oven in cast iron skillet until the internal temperature is 128 ( for med rare)...

take out of oven let rest for 10 minutes...

the cool part about this method is that the steak from top to bottom will be the same color , as in med rare top to bottom...

this is basically the same method as cooking a roast...
