Green Coffee Beans Lose Their Flavor?

I am finishing up a 6 pd. Bag of Ethiopian Natural Yirgacheffee gr.1 Wote Konga. When new this was a blueberry delight. The lst couple of batches have just been so-so, with barely a hint of blueberry.
I keep my beans sealed and in a dark, cool cabinet. So do green beans have a shelf life?

My understanding is yes, but how long varies person to person and on storage conditions. Probably 6-9 months and best if vacuum sealed.

They mature. I'm using up some Cuban turquino now that is 10 years old. Not as bright, but great depth. Kept it in the cellar in a plastic bag.

I have a burlap bag that is half torquino-half Cuban serrano that makes a very deep rich cup. I got the serrano from Roger so he would have an idea how old it is, and the torquino is older, probably not by a whole lot. The bag has been stored dry in the top of the pantry.

5.5 lb. I'm thinking of letting it go for a fair price since all I do anymore is cold brew.

Two possibilities. Yes, eventually green coffee ages, and flavors are lost. Personally, I've never found much appeal in any green that's gone past a year or so.


Second, as you probably know, natural Yirgacheffes are notoriously difficult to roast JUST so. I'm at least as much of a blueberry whore as you are, and it's all I've ever chased for years now. Some of the lots I've worked with had windows that were at most 5 seconds long, generally right on the cusp of second crack, and usually only when I stretch first crack out a bit. Hit that window just right - bam! Blueberries. Miss it - flub. Nada.


I don't know if that window expands or contracts over time. I usually don't buy massive quantities any more, though if that Wote Konga you had was from Klatch, I burned through a total of 30lbs of it. Epic coffee.
