Rob G ... Try Ribeye this way once

Go to your butcher get a 2" thick ribeye.... salt both sides generously ... let sit on counter for 30 minutes to get to room temperature... set oven to 425... heat cast iron skillet on medium high with some oil in it , when good and hot , put ribeye in for about 1 minute (or a bit longer) per side , put in oven for 10 minutes , take out , flip ribeye , cover with foil and let sit for for 10 minutes.... it should be about med-rare ... then enjoy...
