Chicken stock and summer savory.

Sesame oil.

Keep it simple, just like you would a backed potato.

We roast our brussels sprouts. Cut them in half, mix some oil with cider vinegar, salt, pepper, shake and marinate for a bit, then roast. 375? dunno. add some almonds for texture.

Of course, fix it any way you want it, use wine vinegar, lemon juice or rice vinegar, whatever oil you want, season it with other spices, but don't waste time trying to find an herb that will help. The acid and salt cut the bitterness and bring out the savoriness. Oil protects them from burning.

I've always thought that you could jump all of those steps with a vinaigrette dressing, but whatever. I also think that a sprinkle of parmesan or other hard cheese when serving would be good, but my wife is one who makes something once and it is sacred.

Don't eat it, don't cook it. As for sprouts, extra thick bacon sliced into lardons, sprouts split, arranged of a sheet pan with the bacon, roast at 400 for about 30 minutes, sprinkle shreaded parmesan on them fresh out of the oven and fresh pepper.

I cook it, I eat it. But then again I'm just that way.

Simple is often best. Perhaps a drizzle of really good oil (olive or whatever) at the end. You can add nuts (pecans would be my choice) as the crunch adds a nice texture. Also sliced scallion at the end would be nice too, or chive.

You are not going to go wrong no matter how you do it, really.

So Jason, what's the objection to couscous?

Texture. The flavor is pretty much a blank canvas. It's too close to stone ground grits.

I've lived in the south most of my life, but the only way I can stomach grits is to add so much cheese to that grits become the second ingredient. I'm just not a fan of pasty or nearly pasty food. I think I got a bad jar of paste in kindergarten and never developed a taste. I don't shun or even make fun (except my FIL who can't have breakfast without grits) of people who do. I just don't care for it.

I'll fix stuff like that for the family, I just don't partake of the finished product. Nobody in the family misses couscous, so I never cook it.

OK, I was married to someone who had issues with the texture of a lot of food so I get the dislike.

Question

Apparently, great uncle Cleofus Banker made himself some grits.

I can't say "Cleofus" with a straight face.

"Well, the Sister was right. You boys could use a little churching up. Slide on down to the Triple Rock, and catch Rev. Cleophus. You boys listen to what he's got to say."
