I still have trouble hearing second crack sometimes.

The second crack sounds a little like gentle rain falling. But with a fluid bed or hot air roaster, it is a bit hard to hear. I still screw up a roast once in awhile.

Take some beans you may not care so much for and let the roast go longer. First crack is quite loud and usually can't be missed. Second crack should follow within about 1 to 3 minutes for most hot air popcorn poppers.

Personally, I find I like my coffee best after a full 48 hours of degassing. I"m sure you know to use 2 level tablespoons of coffee for each 4 to 6 ounces of coffee.
