Hit and Miss
First off, thanks to the Faiders for giving up those last two TD's...put me in the money on a $250.00 per quarter pool!!! Time to order some more Pirahnas, Palmitas...and perhaps a Cab. of BPC's or some RASS!!!
Anyway, back to my "dilemma". I keep my coolerdors at or around 70% RH, which for me, is too wet for smoking. So, I got a nice little Brazillia humi with a box of CAO's a while ago that I use for dry-boxing. Problem is, most of my selections require different ammounts of time to get "just right" and it seems I havn't developed that touch to determine how wet or dry they be by hand. Too dry...they taste flat and well...dry. Too wet and they get that sour, ammonia flavor/bouquet about halfway through. As I'm poking through my drybox through the day's selections, trying to feel which ones are ready, I get it right maybe half the time. The other half I'm smoking something too wet or too dry. What to do? |
