I've got mine configured with Temp on top, RH on bottom, and I cut the remote sensor off.
That is the one available at Walmart.

For use in a coolerdor, don't cut the sensor wire off.

Just run it out throught the drain plug, pack the opening with some closed cell foam insulation and you have Inside Temp, Outside Temp and RH%.
