Most of the stuff I've been roasting has been to full city or beyond by about 10 to 30 seconds until I can hear the second pop.
I turn off my Hearthware to be sure I hear the popping sounds of the 2nd crack. I'm trying to get to what SW refers to as a full city roast on the dark side. See: http://www.sweetmarias.com/roasted.pict-guide.html By this time, I've roasted maybe a half dozen varieties of beans. But the roasted beans don't seem to have that oily texture. Does a full city roast on the dark side develop the oily texture I'm talking about? Or does this only come out with a darker roast? Or maybe I should be asking about how long after I start hearing the second crack should I be roasting to get to a dark side full city roast? SW says its until you hear 10 seconds of second crack. The first batch of beans I roasted were decaf. Long story but I ended up roasting for 15 minutes waiting for the oils to show. They never did. Tasting revealed I was definitely into a french roast. |
