I don't think that the sour taste is due to moisture content. It could be a bad tin, but just as likely could be the pipe you're using. I've discovered that the same blend smoked in different pipes will taste slightly different. It could also be the type of Virginia leaf used ... English blends are at least 50% Virginia.
You should try a small sampler of different brands - and also try some Balkan blends. Balkans have less Virginia and more Oriental tobaccos, so the odds of having a sour taste are much less. Don't feel that you need to appreciate English blends to be a "real" pipe smoker - everyone has their own likes and dislikes. Like anything else, try lots of different types, find what you like and stick with those. Then with regard to what pipes to take to clubs and such ... I guess this depends on what's in your collection. If you feel the corncob is too pedestrian and you don't want to risk the possible loss of your high-end pipe, then pick something in the middle that you enjoy. There are plenty of quality mid-grade brands out there and lots of bargains on Ebay.
