Looks pretty good. Respectfully, when did black olives intersect with Tex-Mex? I missed that.

My grandmother, mother put olives on enchiladas, traditional and casserole. Black olives only. Many Mexican restaurants in California put black olives on enchiladas.

Admittedly, I don't like cumin, so I don't eat a lot of Tex-Mex food. Coriander tastes like soap to me as well. I've just never seen olives on any Tex-Mex dish before you posted a couple of pictures of your dishes. The only way I can stand them is in a dirty vodka martini.

So what's for lunch?

Took the day off today. Got 2 corn beef briskets in the crock pots. Made some roasted carrots and will be making smashed garlic red potatoes. Also made the oddball beef enchilada casserole. Some friends coming over for lunch and March Madness games. Nice and sunny today. Maybe smoke pipe and cigars later.
