Family coming over. So, today is finger food day. With an assortment of flavored wings both bone-in and boneless, Chex mix, pepper jelly and cream cheese served with club crackers, Five Guys Cajun and regular fries and bacon wrapped shrimp. Also, Sangria, wine, beer, assorted hootch, tea, diet coke and water. I'm sure I'm forgetting something. It will be out all day until it's gone.

I was planning on assorted wings but decided to go with a meatier option, bone in chicken thighs. Going to bake a bunch ranging from honey bbq, and garlic parm, to Frank’s Red Hot. Maybe a mango habanero. Also going to air fry French fries, and onion rings.

For a second time in a week my daughter announced she is preparing dinner tonight. So far I have seen some fresh broccoli and chicken. Not sure what the configuration will be.

Left over baked chicken thighs. I’ll sauce them with BBQ, and garlic parm butter sauce, then reheat in the oven. Mashed potatoes with country gravy, and mixed veggies.

When I hit a hot buy on thighs, I'll bring them home and grill smoke them with apple or pecan and then make several dishes with them for the next week. I have a cashew-chutney chicken salad that is effing amazing.

So, what is for dinner tonight?

I enjoy a good chicken salad. Cashew and chutney sounds good.

Tomorrow I have 6 baked really meaty thighs I will chop up, and add to a curry sauce I make using It’s Delish curry powder. I pour it over some basmati rice. Good hot dinner on what looks like a cold evening.
