- Ziplock bags are definitely permeable. They allow gases to pass practically freely through them - and "humidity" is water as a gas. They may prevent liquid water from going through them but they are no barrier for gaseous water, oxygen, etc. I posted a link a few months back to a site that lists the permeation rates. If you're interested do a search here or just Google on plastic permeability.
