Well- my say- is that it does not really affect the taste or flavor profile. It is like meat. If you have ever bought a whol loin of meat from Buckhead or IBF, when you first open the nitrogen hits you really hard, but allowed to dissipate, it then goes away. I also make sure to have lots of air circualtion then I frist open them to make sure that all of the inert gasses are removed simply by osmosis. Whatever the contents are in the air will be the contents in the beans. So now the question is that is the air here as good as in other countries?
