You have a whole lot more patience than I. Riddling is a pain. Then to freeze the lees, open, sweeten and recap is way beyond my level of convenience. I even gave up bottling my beer. Whole grain, two batches of 10 gallons each = 4 corni kegs. Three times a year and I am good to go. Haven't sanitized or filled a bottle in years.

Riddling, aka rummage takes some time but the job gets done. I don't know if it is patience or obsessive/compuslive. Probably OC.
Next on my list is to attend the local Bloaterian Beermaking Club. I like the idea of kegging.
