Beef and Guinness pie was outstanding. Took way longer to cook than I had planned, plus I got a late start, but it was one of the best things I have cooked since last night...

Indeed. The Iberians made the most of their crossroads.

The Valencian versions often use rabbit, and rabbit makes a fine paella. The version I made reminds me of the one I had in Bilbao.

last night was cod oven roasted over potatoes with fennel on top, quite good, hit the flaky but not dry spot correctly.

Right now I am using my instant pot for the first time to make beef broth which will be used to make a beef burgundy style dinner later (it will be made with a low cost hight quality Rioja instead of a Burgundian wine).

Tonight is a T bone, simple for Sunday night. A fennel, apple and aged Spanish goats milk cheese salad will go with it.

Later in the week will have a couple of pasta dishes built around hot Italian sausage

I hit it out of the park on Friday. Almond and Parmesan pan fried cod loins, masaman curry cauliflower and an asparagus and shitake mushroom stir fry.

Made a huge batch of stir fry that we're still working on.

Just for a change of pace tonight, I'm going to use the same crust on some pork chops and bake some fingerling potatoes that Sprouts had on sale.
