Favorite cheese?

My vote goes to Valdeon, a Spanish cave-aged blue that is wrapped in grape leaves and rubbed with a red wine. It is a really strong blue cheese, but in that flavor you can pick out hints of chocolate.

You can't eat more of it than a couple of bites at a time, but at close to $30/lb., that's probably a good thing.

Runner up is an aged cheddar that Smokin'Actuary sent me awhile back. I have no recall of its name, but it had a crystalline structure that dissolved on your tounge not unlike pop rocks.

I smuggled some farmstead cheeses from England that I bought at the Oxford Farmers Market back in 2005. They were really good, but I have no hope of finding any more. Pogophiles and I were tearing it up at a Camp herf.

Kind of boring, but, Havartti with Caraway on wheat crackers...

Had a blue cheese on a ribeye 2 months ago that was really good, not ventured much into blue's, it wasn't bad price wise, a small piece big enough for 3 ribeye was maybe $7, I think it was called cowboy, the cheese guy at Kroger recommended it....

Very sharp cheddar, especially white is really good too

antique gouda. So old that it has crystallized.
tillamook two year old sharp white cheddar.
High quality sharp cheddar.
Very good swiss. Chewy, yeasty, tasty.
Brie. I have never had a bad brie. I'm sure that it will happen some day. A few years ago I bought one at sams that was like wood, but took it back and yelled at them until I felt better.

Moliterno Black; cave-aged anything; a really sharp cheddar; aged goat gouda; so many and, rarely have I ever had a cheese I disliked.

Favorite cheese? The one I'm eating....
I've taken to aged asiago lately... and found an aged irish chedder - cahills irish whisky cheese; though I've yet to open that one up..
