Absolutely right! Better yet, if you have a Foodsaver vacuum sealer, use that.

After bagging, the routine is:

One day in the fridge. Turn the temp in your freezer (hopefully a separate unit, because the freezers in fridges won't get cole enough) to the lowest (coldest) setting.
Four days in the freezer.
One day in the fridge.
One day at room temperature.
Unbag and back in the humi.
