Bushmills? Great idea!
A couple of pours of the 1608 400th Anniversary it is, then.

Nabbed some 16 Year Old Cask Strength Glen Elgin a few days ago, and have been sipping 'off the top' over the last couple of evenings.
For those of you not familiar with this distillery, it represents one of Diageo's less well known Highland gems. There have been sporadic issues down through the years (usually standard-strength ones at 12 years of age, and most recently as part of the firm's 'Hidden Malts' series). What separates this particular release from the previously mentioned ones is its incredible liveliness. Lots of sweetness (as expected), but also an exemplary balance owing (I suspect) to judicious use of first and second-fill European oak ex-Sherry casks. Even better, it stands up to the addition of more than a mere splash of water (normally, I tend to add little or no water) very well, maintaining its verve and length. Highly recommended!

Sunday afternoon / evening... Started off with some Dun Bheagan 8 Year Old Islay as Phil rounded Amen Corner (wasn't that a simply amazing shot from out of the pine needles on the 13th?), then went for a 2007 Ring Bolt Cabernet from the Margaret River region of Australia to accompany a rack of pork basted with hot pepper oil, maple syrup, alderwood smoked sea salt and coarsely ground pepper. Beautiful wine! Following the feast, we settled into dessert (fresh blackberries) with 21 Year Old Bowmore as well as that cask-strength 16 Year Old Glen Elgin I'd recently purchased. All in all, it worked!

Regions such as Jumilla and Bierzo (there are MANY others as well) have so much to offer in terms of a combination of indigenous grape varieties, unique tastes and sheer depth. On a whisky note, I 'revisited' a bottle of single Bourbon cask matured Arran... Lovely juggling of malt sweetness and crispness with a delicious, subtle salty edge that brought all of the flavours into greater relief.
