Au contraire!

BBQ is any meat slow smoked. While the mid-atlantic and southeast are partial to pork, further west beef becomes more prominent. Chicken and turkey can also make great BBQ.

Regarding the video, Jack's Stack is maybe the third or fourth best BBQ joint in town, but burnt ends are a staple at almost every joint. As our resident gourmand BigO termed it, burnt ends are meat crack.

BBQ is NOT any meat slow smoked. That is a vicious lie propagated by cattle ranchers, poultry farmers and probably the Scientology cult to get in on a lucrative market.

BBQ is PORK! Period! End of discussion!

maybe even a dodo.

slow fires were because you don't always have a great big honking bag of charcoal when your ship hits land and you find meat. You collect driftwood, seaweed, broken sticks, and kill whatever meat you can find, even if it's just a turtle then cook it on a rack of wood or metal.
