There are separate camps on bowl coatings (pre-carbonization) ... both among smokers and carvers. The coating mixture itself varies from brand to brand - but it's usually a combination of carbon particles (like tobacco ash) in a liquid base that is painted on the inside of the bowl. The purpose is to protect the inner walls of the bowl and to promote even cake formation during the first 10-20 smokes.
Some people find the coatings add a rather unpleasent taste, while others don't notice any difference. I personally don't have a strong opinion either way. I've bought pipes with and without coatings and have not had an issue. The coatings can be removed easily with alcohol and/or mild sandpaper.
