Very sharp white cheddar is out at Costco. Years ago, I used up a partial brick in the best damned macaroni and cheese I ever ate. I don't recommend buying it for that purpose, though.

Cabot's aged (2 years, I think) is ambrosia. They do Vermont proud.

Whenever we go to Costco we always get two or three blocks of them. We eat a lot of chesse.

I'm here to report that it makes for a superlative grilled cheese sammitch. The bacon might have been. A bit over the top.

The Cabot rep was at Fairway. I bought a brick of Cabot private stock, aged two years and 20% off.
