Satsuma/mandarin marmalade
Every year, my MIL sends us a case of satsumas from Plaquemines Parish. A satsuma is sort of an extra sweet tangerine.
It isn't easy to consume 30 satsumas before they go off, so this year's batch became marmalade. Juiced a bag of mandarin oranges just for grins. It is fabulous on toast, but I took a pint of it, added some bottled pad thai sauce, a little lea and perrins and a little garlic powder in the blender. Used the sauce to cook some chicken thighs in the oven and then used the sauce/juices to sautee some softened rice noodles in. With a microwave package of mixed veggies, it made for a nice easy dinner. You can always tell when you have a hit from the kitchen in my house because everyone eats in complete silence. The leftovers were especially yummy.
