late dinner tonight, let mom ramble for a long time on the phone

scorched shishito peppers with sel gris were great

risotto with porcini mushrooms were pretty good

portabello mushrooms sauteed with pan drippings and butter and herbs du provence very good

ribeye steak spent too much time in the oven before the reverse sear

2005 Enea Prado de Bodega Muga Gran Reserva was just stunning, deserved a steak done perfectly.

So, what is for dinner tonight?

Tis the season for TAMALES. Pork tamales this week. Queso y Rajás (Mexican cheese and hot peppers) next week. Chile Verde (beef in green sauce) and sweet ones on Christmas Eve. I love tamales.

Made caldo verde (used mustard greens potatoes and leftover pork in various kinds plus leftover mashed potatoes to thicken it). Pretty good on a damp night.

easy to make... soften garlic and onion and some salt in a dutch oven or equivalent. Toss in chopped greens and a little more salt and let them wilt a bit. Add chicken stock, white vermouth. bay leaf, pepper and thyme. Toss in cubed or sliced yellow potatoes. If it gets too thick just add water.

Vegetarian dinner in a pot tonight... Butternut squash purée and mixed beans with Habanero pepper, apple chunks, chopped tomato, corn kernels and chopped kale.

Man I'm gonna miss those. Got spoiled in SATx for that cuisine. Took some lessons before we left tho' and am looking forward to pulling 'em off again soon. Been doing a lot of grazing in Montgomery Al. Found some great places but just been reheating at the temp domocile.
