late dinner tonight, let mom ramble for a long time on the phone
scorched shishito peppers with sel gris were great risotto with porcini mushrooms were pretty good portabello mushrooms sauteed with pan drippings and butter and herbs du provence very good ribeye steak spent too much time in the oven before the reverse sear 2005 Enea Prado de Bodega Muga Gran Reserva was just stunning, deserved a steak done perfectly. So, what is for dinner tonight?
Tis the season for TAMALES. Pork tamales this week. Queso y Rajás (Mexican cheese and hot peppers) next week. Chile Verde (beef in green sauce) and sweet ones on Christmas Eve. I love tamales.

Made caldo verde (used mustard greens potatoes and leftover pork in various kinds plus leftover mashed potatoes to thicken it). Pretty good on a damp night.

easy to make... soften garlic and onion and some salt in a dutch oven or equivalent. Toss in chopped greens and a little more salt and let them wilt a bit. Add chicken stock, white vermouth. bay leaf, pepper and thyme. Toss in cubed or sliced yellow potatoes. Add chopped pork (I had a pork chop, cubed meat, added bone... plus some leftover smoked sausage... you can add anything to this... dry chorizo, ham, whatever). Bring to a boil then dial back to a steady simmer for 20-30 minutes. Add mashed potatoes to thicken as much as you like, correct seasoning. Serve.
If it gets too thick just add water. I made about 1.5 quarts. I also had baby bok choy I sliced/chopped as a green... cabbage will work too!
