The Cajun Meat Company here in Marietta bones out the chicken before stuffing it with rice dressing. The rice dressing itself is phenomenal, but stuffed into a deboned chicken it is divine. Slices like bread. I always have to buy 2 if I want any. I buy the rice dressing by the quart for Thanksgiving. It's far superior than my own recipe.

I'm thinking tacos or nachos. I'm having a strange craving for pickled jalapenos. I would make egg rolls, but I can't find the wonton wrappers.

My 17yr old daughter has started taking an interest in cooking so she has been building menu's and making us dinner. Last night was a Polynesian stir-fry with chicken. Pretty basic recipe but she did a nice job and even improvised a bit with ingredients (easy on a stir-fry but new idea to her). Two nights ago were spring rolls with Thai peanut sauce that were surprisingly good.
Nice to not have to cook every night. Tonight is Take-out Tuesday, but with things opening up we may go out instead.
