Modifying my Haier wine cooler for best function

I recently bought another Haier (60 instead of 40) and decided to try the plastic on the back wall trick, to smooth out the RH fluctuations. It works! But, the temp only gets down to 70 degrees....that's it, no matter how low I set the internal temp gauge set point.
Figured it might be the sensor for the cooler being trapped behind the plastic. Cut a opening around the little square that I assume is the sensor. Actually did it on my smaller unit to see if it helps. Well, maybe a degree or two, but it only gets down to 68 degrees.
The units run very little, so I know it's "seeing" the temp behind the curtain of plastic.
Has anyone found a better solution. 70 is fine, but I'd like to be able to go to 65 degrees.
