Kevin, try to use a thinner plastic material. Home Depot sells a 0.07mm drop sheet, which is very thin. When you apply it, try to trap a little air in there, do not stretch it too tight.
If that still doesn't give you the desired result then get rid of the plastic and just use packing tape around all the edges to get a complete seal - this way you will only have one exposed cooling surface instead of two (front and back). Another option may be to move the sensor - on haiers the sensor is behind the cooling plate. If you decide to do this Be very careful, you don't want to damage the cooling lines. Also, cut a narrow block of floral foam and place it in the drain trough below the cooling surface - this will absorb the condensation that drips down and helps to keep the RH up.
