Favorite cheese?
My vote goes to Valdeon, a Spanish cave-aged blue that is wrapped in grape leaves and rubbed with a red wine. It is a really strong blue cheese, but in that flavor you can pick out hints of chocolate.
You can't eat more of it than a couple of bites at a time, but at close to $30/lb., that's probably a good thing. Runner up is an aged cheddar that Smokin'Actuary sent me awhile back. I have no recall of its name, but it had a crystalline structure that dissolved on your tounge not unlike pop rocks. I smuggled some farmstead cheeses from England that I bought at the Oxford Farmers Market back in 2005. They were really good, but I have no hope of finding any more. Pogophiles and I were tearing it up at a Camp herf.
