Sunday Dinner
Duroc pork chop pan seared and oven roasted in a pan sauce (pullchop from fridge an hour or more prior to cooking... salt well at least 30 minutes before searing... pan sauce was Verdejo butter plus salt/pepper
German potato salad Cabbage braised in Verdejo and pancetta with chili garlic sauce served medium rare the chop was amazing, pouring the pan sauce over the potato salad pulled things together
