Canning bacon

Freeze drying won't work because of the fat content, but canning does.

We bake on a cookie sheet on parchment paper in a single layer until it starts to brown, then take it out. Let it cool to handling temperature, then trim the parchment. Fold in half lengthwise and roll like a sleeping bag. slide roll into a canning jar, put on the lid, and pressure can for 90 min at 10 psi.
