I have considered this before too! I made an old storage box into a humidor. It was pine. I sealed the interior with polyurethane. Didn't matter, the spanish cedar leeched the sap out of the pine. I lined the interior with tin and then installed 1/4" spanish cedar. Works great now! Holds a nice 67%. Some might say the exterior will warp. Eventually it might. So what? I didn't spend a lot. But I did learn a lot! I am concerned that SC veneer would not give you the moisture retention properties you want. I would suggest 1/4". The SC liner essentially is your box in a box. The plexiglass top will work. You won't get a perfect seal and thats okay. You just don't want any large gaps. How about trays? I have made some using 3/8 SC for the sides and 1/8" plywood for the bottom. Drill some holes in the bottom(drill press) and it works great! Keep us posted!
