Green coffee experiment...say whaaaaaaat?

Those of you who order green coffee from Sweet Maria's have no doubt seen the little "post cards" they generally toss in with orders. I usually read them and toss them in the recycling. The latest one, though, caught my eye. Titled "Cupping GREEN Coffee," it has 8 photos of coffee at different roast points (with corresponding temperatures), from green (72 degrees F) to what looks to me like Full City (432 degrees F). On the back, the following blurb was printed:

With the current discussions regarding whether you want to "taste the roast" in coffee, or not, I realized I have never cupped green coffee. As in, un-roasted coffee. As a roast develops, compounds present in the raw beans are converted into intermediate ones that might not even exist in the fully roasted drink. And because there is a higher percentage of acids in green coffee, I thought it would be interesting to cup coffee all the way through a roast, even the stages that are considered undrinkable. The aromas, especially in grinding, were intensely bitter, and I think that is likely the trigonelene that is present in the green and diminishes during the roast. The green coffee tasted like Play-Doh or crayons, not a coffee flavor at all, and the pre-first-crack cups were very astringent and grainy. One of the cups reminded me of commercial coffee that I have had before - a grainy, underdeveloped bitterness. Very interesting, but for the health of your grinder alone, I would not recommend trying this at home.

Interesting, sure, but kind of like a "Hold my beer and watch this" moment, I'm thinking. I'll be heeding his advice and not trying that at home.

Hell, that seems almost as stupid as the "tobaccoccino" thing, but at least Tom can make a case for why trying it made sense...
