That is where it becomes an art. Think about the guy who buys dried tobacco from the grower, and has to decide exactly how to ferment, blend, and do all the other magic necessary for great cigars.
I really feel that roasting coffee may be more complex than making beer or wine. Like you said, just a few degrees, a few extra BTUs of heat will create huge changes. changing yeast, a few extra days here or there, dry hopping, so forth, all things make a beer different. I don't think that subtle changes in process will make such a difference, because roasting something into charcoal and extracting and destroying the chemical components is NOT a delicate process. |
