After 19 hours

The brisket just hit an internal temp of 201. Gonna rest it and then be ready for lunch.

Only 19 hours?

Small piece... or temp too high in the Q?

Enjoy!

We used the flat and it’s fat to make antelope sausage. So it was, in fact, a smaller piece than usual.9 hours at 195, then 10 hours at 250.
