Save yourself a great deal of frustration. Use egg roll wraps instead of manicotti shells. It's pasta anyway and it's much easier to work with. You'll have less waste of the manicotti shells. They tend to break when you stuff them.

I'll be curious to read what you think of this recipe.

These are pretty easy and turn out great. I may try BigO's suggestion next time with the egg roll wraps rather than manicotti shells. A similar treat is "Pig shots" which you can Google for the recipe. Matt Pittman of Meat Church BBQ has some excellent videos and last week I smoked Texas Twinkies also -- yummy!! Enjoy--
