Bbq pulled pork and Ray's sugar free sauce. SBR makes a sugarless bbq sauce I'm really starting to like.

Had some Keto friendly coleslaw with it too.

Chicken enchiladas with Las Palmas mild green enchilada sauce. Used Sargento Mexican blend cheese. Added some black olives. Good lunch for a cool afternoon.

A cigar buddy is deploying in May so me and some close cigar buddies and our wives got together today to give him a send off. And also for his wife could meet our wives so during his year deployment she can reach out to us if she needs auto/home repair watch the kids whatever she needs. I smoked six slabs of spares and countless side dishes. We ended up outside herfing and downing margaritas. It was a good day.

The part of a Reuben I can't have on this diet is the bread and the Russian dressing. I solved this by using a cauliflower pizza crust, on which I put a thin layer of dressing, corned beef from the deli, sauerkraut that I squeezed as much moisture as is possible and sliced Jarlsburg swiss cheese. 10 minutes at 425 and it really worked. I used to make calzones this way 30 years ago and it worked then too. Trick is to squeeze that kraut (which you should never buy in the can. Glass or pouch is best and Boar's Head bagged kraut is worth the time it takes to find it) to death.
