Gumbo: Rice or Mashed Potatoes?
After smoking the turkeys Saturday and making the gumbo most of the day yesterday. Then letting it sit overnight so all the flavors meld together. Tonight for dinner is gumbo. Finally!
I told my Bride I read some folks eat mashed potatoes with gumbo so she is making rice and mashed potatoes tonight so we can do a taste test. Also, this was my first time adding hard boiled eggs to the gumbo. My buddy I got the gumbo recipe from does it. It is a hit! The eggs soak up all that gumbo goodness. Rice or Mashed Potatoes? |

I hope you're sitting down. My wife's Cajun family serves something to go into the gumbo is:
(Wait for it) Potato salad! Rice works for me. Did you use file powder or okre?

I asked her to make a batch when I was making a pot. Their idea of potato salad is mashed potatoes mixed with mayo ( pronounced "MAH-neze"). No wonder my creole potato salad didn’t appeal to her.

So did the taste test. Gotta say wasn't crazy about the mashed potatoes with gumbo. The gumbo was good as were the mashed potatoes but together it was weird. The mouth feel was weird. It made the gumbo have a different consistency. I'm sticking with rice.
As to using the bacon grease vice vegetable oil I honestly couldn't tell a discernable difference. The eggs were a big hit though. |

Rice.
Always rice. The coonasses put potato salad, but they are often sharply divided on this issue. But always rice. No to tomatoes in gumbo. No to eggs in gumbo. They just don't belong. Sidebar, we Sicilians DO put hardboiled eggs in red gravy, especially during Lent.

Haven't tried tomatoes in gumbo. So no eggs in gumbo but yes in red gravy! hahahahaha Too funny.
