Cubanos, the BigO way
A Cubano sandwich is traditionally:
French baguette, 12 inches long (closest thing to a Cubano bread you'll likely find), Smeared with yellow mustard on the inside and butter on the outside, Mojo pork roasted, Ham slices, Swiss or cheddar cheese, Lengthwise slices of dill pickles, Pressed and grilled on a flat top, My family is neither a huge fan of yellow mustard or dill pickles. I have had a great deal of success by cutting the mustard by 2/3 and subbing grilled sweet (or red) onions for the pickles. Give it a try. I made them early in the week and the girls wanted them every night until the mojo and bread ran out. Kim doesn't even like onions (so saddening) and she wanted them 3x a day. Top tip: if you don't have a sandwich press, a flat top griddle weighted down with a cast iron skillet works just fine.
