I’m really not wanting Quarantine Body so I’m making pulled pork tacos with corn tortillas, fresh Carolina reaper salsa, chopped onion and cilantro mix, and pickled onion and carrots mix. Oh and pan fried zucchini Mexican style with corn and queso fresco.

Mike that Reaper salsa sounds good. You growing some super hots this year?

I boil crawfish every Friday from the start of the season till the end. Figure that’s about three whole sacks consumed by just me 7#s at a time lol.

Last night was my wife's homemade pizza. She made the dough thinner than normally so it had an amazing crust and crunch to it. One large rectangle pepperoni and one large cheese pizza with roasted veggies to add as you like.

Well it has been many years since the egg was fired up. It didn't go to Germany with us and in Tejas they know how to smoke. But now we're in the sauce area again and we all know we now can't just hit a place anyway.

Soooo... the egg was fired up yesterday afternoon and a big piece of butt went in. Egg temp still the same this morning as it was last nite when I crashed.

Long slow cook, I love that thing.

Obviously that is dinner tonite.

Made panko breaded chicken tenders in the air fryer. Chopped it up and added it to romain lettuce and ranch dressing. Made some Texas toast.

First grilling of the season last night - just good old fashioned burgers. Now they ARE certified Angus from a farmer that I know personally (FIL Neighbor) and processed by a local Locker. 1/3lb of goodness on a bun, diced up some yukon gold potatoes and tossed in oil, garlic, oregano, thyme and grilled them in a wire basked until they had a nice bit of char.

Always love that first burger off the grill.....
