Parmigiana di Melanzane. The eggplants looked good yesterday and we are more likely to make the effort with both around the house.

K likes eggplant, but the rest hate it. I find nice ones at decent prices and buy one or two to make her a treat, and most of the time I just don't want the effort and they end up in the trash.

We're trying to support our favorite small, family owned restaurants around us. We want them to still be there when all of this is over.

In Ohio our Lt. Gov said , if you have a favorite restaurant and want them to be around after all of this, do take outs with them as often as you visited before.
