I am not a slow cooker person, my suggestion is find a recipe with chicken and rice you like and riff off it. Add the chorizo, chopped, as an additional ingredient. Chorizo likes garlic and lemon a lot... also consider some sherry in the cooking liquid (dry sherry) and also consider sherry vinegar if you have any need for acidity

Here is mine.
Ingredients: 1- lb dry pasta (penne holds up to this well) 2- tablesp. Olive Oil 1/2 cup chopped onion 2- tablesp. minced garlic 1/3 cup taso ham, diced. 1- cup chicken stock 1- cup white wine 1- tablesp. Cajun/creole seasoning 1- tablesp. sweet smoked paprika 2- tablesp. tomato paste 1- pint heavy cream 1- 15oz can diced tomatoes, drained 2 chicken breasts, or 4-5 thighs, or ... Cook the chicken however you like it, grilled or baked. Season lightly with salt, black pepper and garlic powder and drizzle with some lemon juice. Make the sauce: in a large saute pan heat the olive oil over medium heat. and saute 2-3 minutes. Add garlic and stir, another 1-2 minutes. Add wine and chicken stock to pan. Using a wooden spoon scrape any browned bits off the bottom. Let liquid reduce to ~1/2-2/3 cup total. (about 8-10 minutes) In a separate pan, heat the diced ham. Drain the fat, and add to the liquid. Cook the pasta to al dente, not further, drain and rinse. when the wine/stock is reduced, add cajun seasoning, paprika, a little salt and pepper to taste, and the tomato paste and stir well. Add the heavy cream and when it starts bubbling, reduce the heat to low, let the mixture reduce some, till thickened. Add the drained diced tomatoes Add the sauce to the pasta and mix. Add pasta to your bowl, dress with chicken, and shredded parm. cheese. About 6 servings.

Reason: forgot the tomatoes! |

another thought that is quick and easy, a few chicken thighs, browned off, tossed itno a mix of chickpeas and chicken stock and onion and garlic and chorizo, maybe some other odds and ends of ham or sausage if you have them. Serve over rice.
Using canned chickpeas tat should take very little time
