Fridgeador help

Ok, got a question (and it's my first post here!):
I've been cleaning up a 20y/o frost free upright freezer (14 ft3) getting it ready to use in my garage. I have a dual external thermostatic controller, and during the winter will be using a brewer's heating pad to keep the temp up.
Here's the question - in terms of humidity, I've searched and read all the posts I can find, and want to know if it's better to use thin plastic sheeting on the back of the fridge (and if so, how have you all done that), or use an active humidifier (and if so, which ones?)
