I love calamari done right. Leftover salmon and Brussels sprouts. Making more salmon for dinner. And lox...salmon is on a hot sale this week. My girls love salmon and with inflation coming, who knows the next time we can afford it will be. I've been filling the freezers with large IQF shrimp as a hedge.

So what's for lunch?

Chicken two ways.

Thighs diced and fried.

Breasts baked with rosemary, garlic powder, salt and pepper.

Went to Sal’s Tacos for lunch. Had tacos de tripas. Beef tripas are the small intestines and deep fried. It sounds weird but it’s so good.

So what's for lunch?

Tried the new hand breaded chicken sandwich by Carl's/Hardy's. It's a pretty good chicken sandwich. Good size chicken breast, hot and juicy. The bun is really good. The coupon for 2 for 1 is always a plus. Is it better then Popeye's? I find the Popeye's chicken sandwich a bit more tastier. Definitely bigger and a bit cheaper too. Bottom line, Carl's makes a really good chicken sandwich especially with a 2 for 1 coupon.

Getting chicken sandwiches from KFC and Wendy's for dinner to complete the chicken sandwich trifecta.

One last thing, I tried the jalapeño poppers from Carl’s Jr. it packs too much heat and lacks good deep fried flavor goodness. I didn’t like them.
