The aroma from Spanish Cedar comes from the oils in the wood. It is going to take a LONG time, translated as YEARS, for the oils to break down and the aroma to begin to dissipate. To give you an idea, I have about 2200 BF of Spanish cedar in storage. That's a pile about 4' H x 12' L x 4' W. You can smell the Spanish cedar THROUGH the walls and about 3' to the outside of the building. That is in a storage facility that has a LOT of air flow through it. Putting that much Spanish cedar in an enclosed environment like a cooler is going to give you a very overpowering smell every time you open it up.
