Interesting indeed, Mark. I've never gone beyond just empirical trial and error, flicking the heat off for 2-4 seconds and then back on a few times during first crack, never letting the roast stall altogether. I've found a distinct - if not totally repeatable - increase in the fruit notes, perceived sweetness, and body when doing this with Ethiopian naturals.

Some day, when I've got a few hours on my hands and the inclination to do some tinkering, I'm going to wire the heater in an Original Poppery to the Variac I picked up, and wire the fan to a dimmer/ceiling fan switch, so I can vary both temperature and air flow. Then, with about 10 years of trial and error, I ought to have something to write up.
