Sangria and Mojitos

Arrived Ybor City yesterday for a long weekend getaway.

Hit the Columbia restaurant to get my Cuban chow fix. My daughter (just turned 21) ordered a picture of sangria made with sparkling wine from Spain (Cava). Man was it delicious. Followed that up with a pitcher of coconut mojitos. It was delicious as well it a tad too sweet for me but delicious.

I scored a rez at Bernes steakhouse for tomorrow!

Mojito

Why make just one? Mint-infused simple syrup makes the preparation and consistency of this refreshing drink especially easy.

Ingredients

7 ounces of light rum
1 ¾ cups sparkling water
1 tablespoon fresh mint, packed tightly
Juice of 2 limes
Mint simple syrup (recipe below)

Preparation

Fill pitcher with ice and add all ingredients. Stir well. Serve in glasses garnished with mint sprigs and lime slices.

Mint Simple Syrup

Ingredients

¾ cup granulated sugar
¾ cup hot water
1 tablespoon fresh mint, packed tightly

Preparation

Mix sugar with hot water and add mint. Boil water for 10 minutes, stirring to dissolve sugar. Strain to remove mint. Chill before using. Serves 2.

Sangria de Cava (Sparkling Wine Sangria)

Columbia’s sparkling white sangria is great for a fancy brunch.

Ingredients

1 375 ml bottle of Cava (or any sparkling wine)
¼ ounce Torres 5 Brandy (or any Spanish brandy)
¼ ounce Gran Torres Liqueur (or any orange liqueur)
Splash of lemon-lime soda
1 orange
1 lime
Cherries for garnish
Simple syrup*

Preparation

Cut orange and lime in half. Fill large pitcher with ice and combine the wine, brandy, liqueur, lemon-lime soda, the juice of half of an orange and the juice of half a lime. Stir. Add simple syrup to obtain desired sweetness. Slice remaining orange and lime into thin slices. Garnish glasses with orange, lime and cherry.

* To make simple syrup, combine one part water to one part sugar in small saucepan. Bring to a boil, stirring to dissolve sugar. Chill before use. Serves 4.

Look up mrdiver on this board. He lives over in Clearwater, he's good people, would likely find a way to have a cigar with you.

That's very close to my sangria recipe. Coconut would work in a mojito.

We actually had a pitcher of coconut mojitos. As far as flavors they offered coconut or strawberry...we went coconut.

Good choice. Strawberry would have been too much like a daiquiri.

Gran Gala in about the cheapest good orange liqueur on the market. I also use E&J (aka Easy Jesus) brandy to save money.
