I would recommend the course of action that jazznut suggested, and do not cut the sensor off.
You can cut off the other sensor, but that would leave an "open" input to the unit which would be a source of noise that may compromise the accuracy of the unit. Depending on the design, it could also be an issue if the cut leads ever shorted, as the input of the unit is designed to have a sensor connected.
