steak in a plastic pouch... you finish it in a very very hot pan to sear it.
for steak I prefer the reverse sear method, slowly roast the steak in the oven at low temp then slam it on cast steel (I prefer cast steel to cast iron for this). Make for a damn near perfect steak. Sous vide, I have had a lot of food cooked that way and it is excellent. Thin turkey or chicken especially.
